In the rich tradition of Chinese Baijiu, Gujing Gong stands out as a brilliant gem, shining with the radiance of ancient culture. It is not only an excellent wine but also a heritage of brewing craftsmanship and profound history.

 

Origin and Distillation:
Gujing Gong liquor is a traditional famous liquor from Bozhou, produced in Bozhou City, Anhui Province. It belongs to the large qu (daqu) strong-flavor Baijiu category, often referred to as the “Peony in Liquor,” and is recognized as one of China’s Eight Great Liquors. Gujing Gong liquor, a strong-flavor Baijiu, is characterized by its “crystal-clear color, fragrance like orchids, sweet and mellow taste upon entry, and a lingering aftertaste.” It is made from high-quality wheat from the Huai Bei plain in Anhui, the high-quality underground water of Gujing Town, and high-quality sorghum with full grains and strong stickiness. Produced within the specific area of Gujing Town in Bozhou, it follows the traditional Gujing Gong brewing process. Gujing Gong liquor contains a variety of ester compounds in both type and quantity, which are generally more than other strong-flavor qu Baijiu. Through quantitative analysis, Gujing Gong liquor contains more than 80 aromatic substances, 15-30 more than other strong-flavor liquors, and the content of these aromatic substances is 2-3 times that of other strong-flavor liquors. Additionally, Gujing Gong liquor has a complete series of organic acid propionate, which other strong-flavor qu liquors do not have.

 

Alcohol Content and Flavor Profile:
Gujing Gong usually has an alcohol content of 52 degrees or higher, with an excellent taste. It is a typical strong-flavor Baijiu, characterized by a rich aroma reminiscent of orchids. When tasted, it is smooth, mellow, sweet, and lingering, offering a unique drinking experience. Compared to other strong-flavor Baijiu in the market, Gujing Gong contains more aromatic compounds, resulting in a richer aroma without a pronounced harsh alcohol taste. It stands as a Baijiu of remarkable taste.

 

History and Cultural Significance:
Gujing Gong liquor has a history of over 1800 years. According to historical records, Gujing Gong liquor originated in the first year of Jian’an (196 AD). At that time, Cao Cao presented the local specialty “Jiuyun Spring Liquor” and its brewing method to Emperor Xian of Han. Since then, the liquor became a tribute to the imperial court. Gujing Gong liquor has a long history, with legends dating back to the Southern and Northern Dynasties. In the Jin Dian Ji, it is mentioned that in the village of Jiandian in Bozhou, there was an ancient well with clear and sweet water. People used this water to make liquor and tea, creating a memorable taste. Legend has it that a general, defeated in battle, threw his weapons into the well before dying. Surprisingly, the well water became even purer, and the liquor brewed from it was fragrant for ten miles around, gaining fame as the “Famous Well of the World.” According to historical records, the predecessor of Gujing Gong liquor was “Jiuyun Spring Liquor,” brewed under Cao Cao’s instructions. Later, Cao Cao presented “Jiuyun Spring Liquor” and its brewing method, known as the “Jiuyun Liquor Method,” to Emperor Xian of Han, who praised it. From then on, liquor workshops in Bozhou developed rapidly. By the Song Dynasty, Jiandian had become a well-known liquor-producing area. Even today, local people have sayings like “Wuoshui Gueyu Suishui Li, Huqin Jianjiu Yanzhuiban,” reflecting the importance of liquor in local culture. During the Ming Dynasty, Shen Li, an elder of the court, presented “Jianjiu” as a local liquor tribute during Emperor Wanli’s celebration. After Emperor Wanli tasted it, he praised it repeatedly and designated it as a tribute liquor, instructing that it be offered annually. The name “Gong Jiu” originated from this.
